Banana Cake




Liz Davie, Broome local and member of the Stracke-Dolby family, shares the recipe for her “Banana Cake”. Liz says, “When going to a family party or function – the question is, Are you making banana cake?”.
It’s a very simple recipe, so family, friends and parishioners – here it is.

Ingredients
¾ cup margarine
¾ cup castor sugar
3 x 60g eggs
3 medium bananas
1 teaspoon vanilla essence
2¼ cups self raising flour
1 teaspoon bicarbonate of soda
3 tablespoons milk

Icing
¼ cup margarine
1 cups icing sugar sifted
1 tablespoon lemon juice
¼ cup cream cheese (philly)
1 banana


Method
Cream margarine and sugar until light and fluffy.
Beat in eggs one at a time.
Mash bananas then beat in with vanilla.
Sift flour and bicarbonate of soda together. Then fold into mixture half at a time, alternating with milk.
Place mixture in 24cm round greased (or similar sized) baking tin and bake in centre of a moderate oven at 180c for 40-50 minutes or until cooked.
Turn out onto wire cooling tray.

Icing
Cream margarine with icing sugar, cream cheese and lemon juice until light and fluffy.
Slice banana and place on cake.
Cover with icing.
